Ingredients

    1 15 oz. can pumpkin (original recipe called for 1.5 lbs peeled pumpkin)
    3c. leeks, sliced (1 bunch)
    3 cloves garlic minced (or 1 T. from jar)
    2 T. olive oil
    1 c. skim milk
    2 c. chicken broth
    1/2 c. white wine
    1/2 t. dried thyme
    bay leaf
    sprigs of fresh parsley (optional)

Directions

Saute the leeks and garlic in olive oil until both have "sweated" and gain translucence. Add pumpkin, wine, and chicken broth. Add herbs, remembering that bay leaf and parsley sprigs will be removed as the soup finishes. Simmer all together at least 20 minutes. Use immersion or regular blender to even the texture. Serve in bowls decorated with uncooked sprigs of parsley and/or nonfat sour cream (not in calorie counts).
