Ingredients

    1 tsp olive oil
    1 medium onion, peeled and chopped
    2 garlic cloves, peeled and crushed
    1 tsp mustard powder (i dont add this)
    2.5 cm ginger, peeled and grated
    fresh ground pepper
    pinch of salt
    1 litre vegetable stock
    6 medium carrots, peeled and chopped
    2 tbsp parsley ( i didnt use this)
    2 small potatoes, peeled and sliced.

Directions

in soup pot, heat up veggie stock
in frying pan, heat oil.
soften onion, garlic, ginger, salt and pepper (mustard powder)
after 2 minutes, add 2 tbsp of stock.
after another 2 minutes, add the carrots. mix well.

pour contents of the frying pan into the soup pot. bring to a boil and then allow to simmer for 40 minutes.

blend until smooth.
