Introduction

Sometimes as a busy mom I forget to eat throughout the day and find myself starving by the time I'm home in the evening. I made the kids chicken nuggets for dinner and was too lazy to make myself something, so came up with this quick & easy salad which would be a healthy wake to make up my calorie deficit. I made the kids chicken nuggets for dinner and was too lazy to make myself something, so came up with this quick & easy salad which would be a healthy wake to make up my calorie deficit.

Ingredients

    Kirkland Disney Whole Grain Chicken Nuggets (5)
    2 cups salad greens
    2 tbsp blue cheese dressing
    1/2 small peeled and seeded cucumber (optional)
    1/4 cup cheese or choice (optional)

    Note: May use light balsamic vinaigrette instead of blue cheese to save fat and calories.

Directions

Take 5 of your kids chicken nuggets and combine with remaining ingredients. You can add as much or as little of the veggies as you like. Takes 15 minutes from start to finish and will feed your kids also.
