Ingredients

    1 TBS Extra Light Olive Oil
    1 medium or large Onion
    1/2 Red Pepper
    1/4 Orange Pepper
    45 Grams firm tofu crumbled
    1 large carrot
    1 Tpackage Chili Seasoning
    1 clove of Garlic
    1 TSP Cayenne Pepper
    1/2 cup tomato juice
    1 Cup Vegetable Stock
    2 Cups Black Beans
    1 Cup frozen corn
    3 TSP Corn Starch
    Salt and Pepper

Directions

Add all ingredients together into your slow cooker and turn on high. Cook 2-4 hours or until desired softness of vegetables.

Great for freezing and tastes great served over brown rice.
