Ingredients

Olive Oil, 1 tblsp
Coconut Milk, Lite, two 13.5 oz. cans
Garlic, 3 cloves, minced
A Taste of Thai - Red Curry Paste, 4 tsp
Fish Sauce, 1 tbsp
1.5 lbs Shrimp, cooked
2 Green Bell Peppers, cut into strips
2 Red Bell Peppers, cut into strips
Pepper, red or cayenne, 1 tsp
Cilantro, raw, 2 tbsp, chopped
Salt, .5 tsp
Directions
Saute garlic and cayenne pepper in 1/2 of olive oil.
After 2 minutes, add shrimp and bell peppers and mix in. Cook shrimp mixture on medium high heat for 5 minutes. Add cilantro and mix in.
Remove from pan and put aside.
In a large saucepan, add coconut milk and heat.
Whisk in Curry Paste.
Stir frequently.
Once boiling for 1 minute, reduce heat to low for 3-4 minutes until thickened.
Add fish sauce and stir to blend.
Add in shrimp mixture and heat through on low.
Serve over jasmine rice or rice noodles.
Makes six servings. Enjoy!
