Introduction

Most people think I'm crazy when I tell them I put chocolate in my chili! People in mexico have been using chocolate for savory cooking for centuries. It does not add sweetness to the chili, but it does add a nice earthy tone to it as well as a slight rich texture.

VARIATION: for a vegetarian version, you can replace the meat with black beans.

Number of Servings: 4

Ingredients

    1/2 lb. 93% lean ground beef
    3/4 cup chopped onion
    1 tsp minced, or crushed garlic
    1 15.5-oz can chili beans
    1/2 15.5-oz can black beans
    1 6-oz can tomato paste
    1 Tbs. cumin
    3 Tbs. Chili powder
    1oz bittersweet chocolate

Directions

Brown meat in a large dutch oven (deep skillet). Drain if necessary.

Add onion and garlic, saute until onion is cooked thoroughly.

Add remaining ingredients, except for the chocolate. Over med heat, cover and bring to a simmer. Simmer for about 15 to 20 mins.

Chop up and stir in the chocolate, til it melts in. Cover and simmer for another 5 mins.

Makes 4 servings (1 cup each)

TIP: I like to prepare the onions, meat and garlic the night before, then in the morning throw it all into the slow cooker (minus the chocolate), and cook on low for about 8 hours, adding the chocolate in during the last hour.
