Meatloaf made with lean ground turkey can tend to be dry and mealy. The shredded zuchinni in this recipe not only adds nutritional value, but moistness and tenderness. Using instant oatmeal (vs. regular or quick oatmeal) also helps ensure a more tender, uniform texture.

This recipe makes two medium-sized meatloaves. Serve one hot out of the oven and freeze one for later.

Ingredients

    3 lbs. lean ground turkey (a combo of dark & white meat)
    1 cup instant oatmeal (about 6 packets)
    1 large red pepper, diced into small bits
    1 large or extra-large zuchinni, shredded
    1 medium carrot, grated
    1 medium yellow onion, grated or very finely chopped
    2 eggs
    1/4 c. roasted garlic marinara sauce
    1 1/2 tsp salt
    1 tsp freshly ground black pepper

    Optional - if you want more of an Italian flavor, add 1 tsp. each of dried oregano and dried basil

Directions

Preheat oven to 375 degrees. Place all ingredients in a large bowl and mix thoroughly. The non-meat ingedients should be evenly distributed throughout the ground turkey. Form two meat loaves with your hands and place them in a large, non-stick pan. Pour about 1/4 c. water in the bottom of the pan, cover securely with aluminum foil, and bake for 60 minutes. Remove the foil and bake an additional 15 minutes to brown the top of the loaves. If you wish, spread 2 Tbsp. of roasted garlic marinara sauce on top of each loaf during the final 15 minutes of baking. When done, remove from oven and let the meat loaves rest for 15 minutes before serving.

    I can't believe how delicious and juicy this meatloaf is! You would never guess that it has grated zuchinni in it. The texture is great and the flavor is awesome. I recommended this to my friends who made it and they love it too. If you So will you! If you love meatloaf, this is a must try recipe. - 11/28/09
