Ingredients

1.5 cups all-purpose flour
1/2 cup crushed bran cereal
1/2 cup whole wheat flour
2 cups white sugar
2 (3.5 ounce) packages instant banana cream pudding mix
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 cup canola oil
5 (1/4 cups) egg beaters/egg substitute
2 cups canned pumpkin puree
1 cup, banana mashed
1 4oz pkg applesauce
1 cup walnuts
Directions
1) Preheat oven to 325 degrees F (165 degrees C).
2) Use spray cooking oil to coat two 9x5 inch loaf pans or one bundt pan.
3) In food processor, crush bran flakes to the consistency of flour.
4) In a large bowl, combine flours, crushed bran flakes, sugar, pudding mix, baking soda, salt and cinnamon.
5) In a separate bowl, combine oil, eggs, banana & pumpkin until just blended
6) Gradually pour egg mixture into flours & blend well
7) Stir in walnuts.
8) Pour batter into prepared pans.
In pre-heated oven, bake for approximately one hour, or until a toothpick, inserted into the center of the pan, comes out clean. Remove from oven and let bread stand 15 minutes. Remove from pans and cool on wire rack before serving.
