Introduction

You can use shredded beef, pork or chicken to make this taquitos. Much healthier then the frozen variaty that you microwave.
I made this recipe for one taquito so that is what the nutrition is for. You can make as many as you want at one time for a great dinner or appetizer.

Ingredients

    1 Corn Tortilla
    2 Tbsp Shredded Pork (or Beef or Chicken)
    2 Tbsp refried beans (lowfat)
    2 Tbsp shredded cheddar cheese

Directions

Preheat oven to 350.

Lay corn tortilla flat. Spread refried beans on tortilla. Place pork and cheese in middle of tortilla and roll up. No need to tuck ends.

Place seam side down an a cookie sheet lined with foil.

Bake 20 minutes until taquitos are crunchy.

Serve with salsa and sour cream.

    Very Good
    I used chicken instead of pork. I think the nutritional information is wrong because 3 oz of any of the listed meats is a lot more than 2 tablespoons. - 11/3/09
