Ingredients

    1 boneless skinless chicken breast
    1/4 cup canned black beans rinsed and drained
    1/4 cup salsa
    1 oz. shredded cheddar cheese
    1 TB low fat sour cream
    diced fresh cilantro (optional)
    diced fresh green table onion (optional)

Directions

Preheat oven to 375 degrees or heat charcoal grill to high or until coals are red with white tips.
1. Rinse chicken breast and pat dry - place on a large piece of aluminum foil.
2. Rinse black beans & drain well - put on top of chicken breast.
3. Top beans with salsa.
4. Top with diced green onion to taste.
5. Seal chicken, beans salsa and onion in the foil folding sides and edges to close packet tightly.
6. Place packet on cookie sheet or directly on grill rack. If grilling, reduce heat to medium low. Cook for 15-20 minutes turning once.
7. Open foil packet being careful of escaping steam. Sprinkle with cheese and refold foil.
8. Reopen in about 5 minutes or when cheese has melted and sprinkle with fresh cilantro. Serve immediately.
