These pancakes are lightly spiced, I always and more spices so, If you like a bit more pizazz, you can increase the spices.
I use all organic ingredients and Egg lands Best Eggs.

Ingredients

    Spelt Flour, 1 cup
    Baking Powder, 4 tsp
    Flax Seed Meal (ground flax), 3 tbsp
    Baking Soda, 1 tsp
    Nutmeg, ground, 1 tsp
    Cinnamon, 2 tsp
    Ginger, ground, 1 tsp
    Liquid Stevia, 2 droppers
    Egg, fresh, 1 large
    Skim Milk, 2 cup
    Pumpkin, canned, without salt, 1 cup
    Vanilla Extract, 2 tsp
    Egg white, fresh, 3 large

Directions

In a large bowl, whisk together the flour, baking powder, baking soda, Flax Meal and spices.

In a separate bowl, mix together the milk, egg yolk, pumpkin, vanilla Extract and stevia. Stir in milk until well-blended.

All at once, add milk mixture to dry ingredients and stir just until combined.

In a medium bowl, beat egg whites until light and fluffy (you can use a fork, whisk, or electric beater for this). Fold egg whites into batter.

Ladle batter by 1/4 cup amounts onto a preheated nonstick griddle lightly sprayed with cooking spray, Cook until evenly browned on both sides.

Recipe makes 17 good size pancakes (when the 1/4 cup measure is used).

    Incredible!
    Huge bang for the calorie buck! These are delicious and the added value is that they are very nutritious and low calorie. I normally do not like pancakes because they're heavy. These are not - they're prefect. Thanks for posting! I have batter in my fridge for the rest of the week. - 1/16/12
