LADIWOLF59 sparkmailed this recipe as I wasn't impressed with the plain Fava Bean recipe that I had tried.
Original recipe calls for oven at 350 F. This burnt the beans within the first 30 minutes. If I ever try this again, lower oven to 275 F.

Ingredients

    2 1/2 cups Bob's Red Mill Fava Beans: rinsed, drained & dried according to package directions
    2 tbsp EVOO
    1 tsp Onion powder
    1 tsp Garlic powder
    1/4 tsp Sea Salt or other fine salt...or to taste
    1 tbsp Fire Roasted Creations CHIPOTLE RUB (more or less) or your favorite chili or cajun seasoning
    Mint leaves, optional

Directions

1) After preparing beans according to package directions, place in roasting pan or on cookie sheet.
2) Preheat oven to 275 F. Roast for about 30 minutes: stir and roast for about 10 to 15 minutes more.
3) Drizzle with EVOO and sprinkle with the seasonings. Stir well.
If you want them spicier, add more Fire Roasted Creations CHIPOTLE RUB while they are still warm.
