Ingredients

    4 frozen chicken breasts
    1 can black beans
    1 can mixed variety beans (or other can you have lurking in the lazy susan)
    1 can diced tomatoes
    1 cup frozen corn
    1 cup water, or chicken stock
    1 onion, chopped
    2 cloves garlic, minced or put through a garlic press
    1 tsp. chilli powder
    1 tsp. cumin

Directions

Rinse the beans well to remove residue and sodium. Put all ingredients into the crockpot on low heat for 5-6 hours. Just before serving, take two forks and shred the chicken. Give it a good stir and serve it up alongside grated low fat cheese, yogurt cheese (to substitute for that fatty sour cream!) and salsa. 10-1 cup servings
