Ingredients

    1.5c egg beaters
    7oz fresh mushrooms,chopped
    1 medium onion,chopped
    1 red bell pepper,chopped
    1 can (15oz) black beans,drained and rinsed

Directions

in large skillet over medium heat spray with nonstick cooking spray. Add onions then mushrooms,and pepper and cook till tender. Remove from pan. Add egg beaters and cook till fluffy and done. Add veggies back to pan and add beans. Cook on low for a few minutes till beansare warmed through.
