Ingredients
* Broccoli, fresh, 500 grams
* Cucumber (with peel), 1 cucumber (8-1/4")
* *Spanish Olives w/pimento - 2 Olives, 8 serving
* Red Ripe Tomatoes, 1 cup, chopped or sliced
* Green Peppers (bell peppers), 0.5 cup, chopped
* Onions, raw, .25 cup, chopped
* Newman's Own Lighten Up Light Italian Dressing, 2 Tbsp, 4 tbsp
* *Lemon Juice, .125 cup
* Thyme, fresh, 1 tsp
* Salt, 1 tsp
* *Walkerswood Traditional Jamaican Jerk Seasoning, 1 tbsp
* Cooked Chicken Breast, no skin, 450 grams
Directions
Dice the chicken into small pieces and mix it with the Jerk seasoning.
Spray Pam on a nonstick skillet and throw the chicken pieces in and let them brown. You may turn them when they begin to get dark. When done, turn off the stove.
In the meantime, cut the broccoli into tiny little florets (no more than 1/2 inch (including the stems if you like them). Dice the tomatoes and the cucumber into 1/2 inch pieces. Combine and add the olives, onions, thyme, lemon juice and dressing.
Add the chicken to this mixture and toss.
You can eat or chill for days on end in the fridge! Enjoy :)
