A little bit different take on chili. A little bit different take on chili.
Number of Servings: 20


    2.5 lbs chicken cut into 1/2" cubes
    2 C chopped celery
    1.5 C chopped onion
    4 cloves garlic - minced
    2 TBS cooking oil
    2 15 oz. cans tomato sauce
    1 14.5 oz. can tomatoes, cut up
    1 C chicken broth
    1 medium sweet red pepper - chopped
    1 bay leaf
    2 TBS chili powder
    1 TBS sugar
    1 tsp dried oregano - crushed
    1/2 tsp. ground cumin
    8 oz. dried mushrooms (optional)


Cook half the chicken, celery, onions and all of the garlic in hot oil in a dutch oven until chicken is brown and vegetables are tender. Remove from dutch oven. Repeat with remainder of chicken, celery & onions. Return all to pot. Stir in tomato sauce, tomatoes & broth. Bring to boil; reduce heat. Simmer covered for 15 min. add rest of ingredients. Simmer covered 30 min. Remove bay leaf; stir in mushrooms before serving.

Makes about 20 1-cup servings.
