Ingredients

    1 1/2 Cups All-purpose Flour
    3/4 Cup Flax Seed (I usually use the whole seeds, but you can grind it too)
    1 1/2 Cups Fiber One® Cereal, ground to make 3/4 cup
    1 Cup Brown Sugar
    2 Teaspoons Baking Soda
    1 Teaspoon Baking Powder
    1/2 Teaspoon Salt
    2 Teaspoons Cinnamon
    1 1/2 Cups Shredded Carrots
    1 Cup Applesauce
    1 Cup Mini-chocolate Chips
    3/4 Cup Skim Milk
    2 Large Eggs, beaten
    1 Teaspoon Vanilla
    1 Cup Walnuts, chopped

Directions

Mix dry ingredients. Add carrots, applesauce, chips, and nuts. Pour in liquid ingredients. Do Not Overmix! Fill muffin cups 3/4 full and bake in a 350 degree oven for 15-20 minutes

**I prefer to use muffin papers in my muffin pans
