Ingredients



    * Whole Wheat Flour, 1 cup
    * Baking Soda, .5 tsp
    * Baking Powder, 1 tsp
    * Salt, .5 tsp
    * Honey, overflowing 1/3 cup
    * Egg, fresh, 1 large
    * Applesauce, unsweetened, .25 cup
    * Vanilla Extract, 1 tsp
    * Oats, 1.33 cup
    * Raisins, .5 cup, packed
    * Almonds, 1 oz (24 whole kernels)
    * Cinnamon, ground, 1 tsp

Directions

1. Combine dry ingredients, except for oats, raisins, and almonds.

2. In larger bowl, combine wet ingredients.

3. Stir in dry ingredients, then add oats, raisins, and almonds (chopped).

4. Drop the batter by rounded teaspoons 2-inches apart on the baking sheets and use a fork to gently flatten the dough.

5. Bake at 375* for 10-12 minutes, or until they look dull on the surface but are moist and soft.

6. Cool on rack and enjoy!

    A little dry and not very sweet. Also, I had to grease my cookie sheet because the first batch stuck to it. Otherwise a filling cookie that has a nice crunch. - 11/29/10
