Ingredients

3 cans Crab, drained
1 cup Whole Wheat Flour
1 cup Yellow Cornmeal
1/2 cup Scallions
1/2 cup Low Fat Buttermilk
1/2 cup Light Sour Cream
2 tbsp Canola Oil
2 Large Egg Whites
1 Shallot, diced
1 tbsp Thyme
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Garlic Powder
1/2 tsp Paprika
1/2 tsp Cayenne Pepper
Pinch of Black Pepper
Directions
1) Bring all cold ingredients to room temperature before mixing. This should take about 45 minutes.
2) Preheat oven to 400 degrees
3) Spray nonstick cooking oil on a cookie sheet
3) In a bowl, combine cornmeal, flour, thyme, baking powder, baking soda, garlic powder, cayenne pepper, paprika, and black pepper
4) In a separate bowl, combine egg whites, buttermilk, and sour cream. Add cornmeal mixture, mixing just until combined. Do not over mix.
5) Gently fold in crab, shallot, and scallions
7) Roll mixture into 6 balls and brush with canola oil before placing them on prepared cookie sheet
8) Bake for 10-15 minutes
