Introduction

We make this every year and always get asked for the recipe. You can make it to your taste by adjusting the pepper and salt. We like making it ourself because we do the triming on the meat and can make it very low fat! We make this every year and always get asked for the recipe. Ingredients

    2 lb (32oz) Ground Venison
    1 Tablespoon salt
    1/2 cup water
    1 1/2 Teaspoon liquid smoke
    1/2 Teaspoon onion powder
    1/2 Teaspoon garlic powder
    1 Tablespoon mustard seed
    1/2 Tablespoon crushed red pepper

Directions

Mix ingredients very well.
Form into three slender sticks.
Wrap in plastic wrap and refrigerate overnight.
Bake on foil covered oven rack for one hour at 300 Degrees.

Tips: Use rubber gloves when mixing so your hands don't smell like liquid smoke for two days. Use heavy duty foil on your oven rack. Turn sticks a couple times while cooking so that they brown all the way around. Enjoy!

    Very Good
    This is a great basic recipe which can be built upon in any number of ways. I think to start off, I will use a bit more red pepper in the next batch to spice it up a bit - we like things a bit spicy :) - 3/29/11
