Ingredients
-
1 cup bread crumbs (1/2 plain and 1/2 italian)
2 tablespoons brown sugar
1 teaspoon salt
1/2 teaspoon black pepper
*1/2 teaspoon old bay seasoning or allspice
3 tablespoons vegetable oil
4 chicken breasts (cut into 2 inch pieces)
1/3 cup of flour
2 eggs beaten or egg beaters
* this ingredient was not listed in the food data base.
Directions
Pre heat oven to 375 degrees F.
I usually have 3 shallow pans or pie pans lined up. 1 for the flour, 1 for the egg, and 1 for the bread crumb mixture.
Mix bread crumbs, sugar, salt, pepper, and old bay seasoning (or allspice). Drizzle 3 tablespoons vegetable oil evenly over the breading tossing it to mix thoroughly.
Cut chicken into about 2-inch pieces.( I have used larger slices to make more of a "chicken finger".(Next is where my kids like to help) Coat chicken first in flour, then in egg, then in bread crumb mixture. Place chicken on a cookie sheet and cook for about 15 minutes (longer if using larger chicken pieces). You are looking for the chicken tenders to be golden brown.
