My mom used to make lima beans and ham hocks and I make them now. I was trying to think of a way to make the dish more diet friendly and this is what I came up with.... Number of Servings: 6

Ingredients

    2 cups extra lean ham, cubed
    1 lb. dried lima beans, small or large
    4 cups Low Sodium chicken stock
    1 small onion, diced small
    1 cup celery, diced small
    1 bay leaf
    .5 tsp. dried thyme
    .5 tsp. dried rosemary
    dash garlic powder
    salt
    pepper

Directions

Makes 6 regular servings or 4 very generous servings.

Clean and wash the beans and soak overnight in cold water.
The next morning, gather the rest of the ingredients. Drain the beans.
Add all ingredients to a crock pot set on low.
Cook for 6 to 8 hours.
