Introduction

This is a low-fat version an old traditional recipe. It makes a great morning hot cereal that tastes like pumpkin pie! It's not sweetened so you may want to add some brown sugar or honey on top. Ingredients

    4 cups milk
    2 cups (1 can) pumpkin
    1 1/3 cups cornmeal
    2/3 cup cold water
    1 T. pumpkin pie spice
    (or 1 tsp each cinnamon, ginger, nutmeg, and allspice)

Directions

Mix milk and pumpkin in a large saucepan and bring to a boil over medium heat, stirring frequently to prevent burning. Meanwhile, mix the corn meal with the cold water. When the milk and pumpkin mixture has come to a boil, lower the heat and add the cornmeal mixture slowly, blending thoroughly. Add the spices and stir constantly for 3-4 minutes until the mixture has thickened to the consistency of oatmeal. Makes approximately 8 1-cup servings.
