Ingredients

    500 grams King prawns raw fresh or frozen or cooked (preferably raw)
    2 heads pak-choi chopped in large piece (or how you like it)
    1 Carrot cut in thin strips
    4 spring onions (sliced thinly)
    120 gram, Blue Dragon Hoi sin and garlic sauce (or other hoi sin)
    120 gram, Blue Dragon Stir fry sauce - oyster (or other oyster)
    2 servings Egg noodles - medium (1 slab = 1serving = 85gr dry)
    Soy Sauce, 4 tbsp
    Ginger Root, 2 tsp
    1500 vegetable or chicken stock (fresh made or bouillon or cube)

Directions

1. In a wok or large saucepan, bring the stock to the boil. Stir the sauces into the stock, then add the ginger. Simmer for a moment, then add the prawns:
- if frozen; stir in untli the pan is back to boil simmer for 2 minutes then go to step 2
- if raw; simmer for 2 minutes then go to step 2
- if cooked; go to step 2

2. add the noodles and boil for 2 minutes making sure that you untangle and spread the noodles with a fork

3. add the bok choi and carrots and cook for 2-3 mins more until just wilted.

4. Scatter with spring onions and serve straight from the wok, using tongs for the noodles and a ladle for the broth.

You can add more vegetables if you like (mange touts, baby corn etc)
It can also be made with left over chicken cut into manageable pieces.
