Cooking miso will destroy its healthy, so avoid boiling it by stirring it into the dish the last few minutes before stirring
Number of Servings: 1
Ingredients

2 cups water
1 clove garlic-peeled and crushed
1 inch piece of ginger
2 tbsp miso
1/4 cup firm tofu cubed
1 small carrot minced or grated
1/4 cup green veges-your choice
Directions
Makes one serving
1) In a medium soup pot bring water to a boil
2) Reduce heat and add garlic and ginger
3) Cover and let simmer for 8 mins
4) Remove garlic and ginger with slotted spoon and turn off heat.
5) In a small bowl, stir together the miso and 3tbsp of the stock you have just made until the paste is smooth
6) Add all the ingredients to the water and cover to sit for 3-5 minutes.
This could be one large serving or two smaller ones.
