Ingredients

    2 pints fresh strawberries
    2 tablespoons cornstarch
    1 1/2 cups water
    1 (0.3 ounce) package sugar free strawberry kiwi gelatin
    3 tablespoons sugar
    1 graham cracker pie crust (reduced-fat)
    2 cups whipped cream (reduced fat)

Directions

Hull and slice strawberries and set aside. In a saucepan, combine cornstarch and water and stir until smooth. Bring to a boil and cook for 2 minutes or until thickened. Remove from heat, and stir in gelatin and sugar until dissolved. Stir in strawberries and pour the filling into the crust. Cover and refrigerate until firm (preferably overnight).
Serve with whipped topping and garnish with half a strawberry, if desired.
