Introduction

Ingredients

    2 cups salmon, flaked
    1 red or yellow bell pepper, diced
    1 cucumber, peeled, seeded & diced
    .5 cup chopped onion
    4-5 tbsp. greek yogurt, plain (enough to moisten)
    1/4 tsp. cayenne pepper
    salt & pepper
    juice of 1/2 a lemon
    *Optional: 2 hardboiled eggs (not included in nutrition information)

Directions

In a large bowl, gently toss together the salmon and crushed hard-boiled eggs (optional). In another bowl, combine bell pepper, cucumber, onion, and yogurt. Add seasonings and stir to combine. Pour mixture over salmon, add lemon juice, and toss lightly to combine. Serve over lettuce or as a sandwich.

    O.K.
    The flavor wasn't worth the cost of the meal. At $3.79/can of salmon, I should have just used tuna. No offense to Paula Dean or the person that posted this recipe, but this one goes in the recyling bin. - 2/28/10

    Incredible!
    Loved this. Had a very bright, fresh taste. I used one of the 2.6 oz packets of salmon, so I scaled the quantities of everything back and got just enough to give me a few servings of a quick protein snack. My picky husband won't touch salmon so I'm thinking of trying with tuna as well. - 1/27/10
