Ingredients

    1-1/2 cups roasted, salted cashews
    1 cup Maltitol crystals (DO NOT SUBSTITUTE WITH OTHER ARTIFICIAL SWEETENERS - it will not work!)
    1/2 cup butter
    1/2 tsp vanilla extract
    3 oz. dark sugar-free chocolate
    2 Tbsp cashew butter (unsweetened)

Directions

Melt butter in large non-stick skillet. Add Maltitol crystals.

Stir constantly until caramelized and a dark brown color - about 15 - 18 minutes at medium-high heat.

Remove from heat and quickly stir in vanilla, then stir in cashews until coated. Pour mixture onto lightly sprayed baking sheet, and use cooking spoon to press into a single layer. Cool on sheet at room temperature until set.

Place 3 oz chocolate into microwave-safe bowl. Heat on 30% power (or in 20 second increments) until melted. Stir in cashew butter until thoroughly blended.

Dip pieces of brittle halfway into chocolate mixture and place on wax or parchment paper to set at room temperature.

Store in airtight container when completely cooled.
