Ingredients

2 Whole Wheat Pitas
4-5 Tablespoons Pizza sauce
1/2 medium sweet pepper (green, red, or yellow are fine, or substitute another vegetable)
1/2 box frozen chopped spinach
~100 g boneless skinless chicken, precooked and sliced
~1.5 ounces (40g) part-skim mozzarella cheese, finely shredded
Directions
Preheat oven to 350 degrees F.
Place pitas on a cookie sheet, flattening if necessary.
Spread ~2 tablespoons of pizza or tomato sauce on each pita, making a thin layer of sauce.
Chop sweet pepper or other vegetable into strips/small chuncks, and scatter over pita base.
Add sliced chicken.
Cook spinach according to package directions, then scatter over pizzas.
Top with shredded cheese.
Cook for about 10 minutes, or until cheese is melted and pizzas are heated through.
