Introduction

Ingredients

    1 Medium Sweet Potato, peeled and cut into roughly 1.5 inch cubes
    3 Medium Red Potatoes, skin on, halved then quartered
    2 Large Carrots, cut into one inch long sections
    1 Medium Yellow Onion, halved then quartered
    8 Whole Cloves of Fresh Garlic
    1.5 tsp. Thyme, crushed in hands before adding to dish
    1.5 tsp. Rosemary, crushed in hands before adding to dish
    Drizzle of Extra Virgin Olive Oil
    A sprinkling of Kosher Salt

Directions

Preheat oven to 400 degrees. Prep veggies and add to casserole dish large enough to hold all ingredients in a single layer. Drizzle with olive oil enough to coat veggies, but not so much it pools in the bottom of the dish. Toss with hands to ensure even coating. Sprinkle on top the herbs and kosher salt. Place in middle rack of oven. Cook 1 hour, stirring halfway through. Makes approximately 4 2-cup servings.
