Ingredients

    2 cups chocolate chips, divided
    1/2 cup (1 stick) butter, softened
    1/2 cup granulated sugar
    1 egg
    1/4 tsp vanilla
    3/4 cup all purpose flour
    3/4 cup oats, quick or old fashioned
    1 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp salt (optional)

Directions

1. Heat oven to 375*F. Melt 1 cup chocolate chips in small saucepan or in microwave; set aside. Beat butter and sugar until fluffy. Add melted chocolate, egg, and vanilla. Add combined flour, oats, baking powder, baking soda, and salt; mix well. Stir in remaining chocolate chips.
2. Drop dough by rounded tablespoonful onto ungreased cookie sheets.
3. Bake 8 - 10 minutes or just until set. (Do not overbake. Centers should look soft). Cool 1 minute on cookie sheets; transfer to wire rack. Cool completely. Store tightly covered.

Makes 36 cookies.
