Ingredients

    1 1/2 to 2 pounds sole filets
    1.8 tsp. salt
    2 tablspoons lemon juice
    1/4 tsp. dill weed, dried
    4 slices bacon, cooked and crumbled
    1/2 c. chopped scallions or green onion
    1/2 c. peeled, seeded and chopped tomato

Directions

Makes 4 serving

Preheat the broiler. Lightly grease the broiler rack. Arrange the sole filets by folding them such that they are the same thickness end to end. Sprinkle with salt and pepper. Mix the lemon juice and the dill weed in a small bowl, brush over the fish. Mix the bacon, scallions and tomato in another bowl, spoon over the filets. Broil four inches off the heat for about 5 minutes, or unitl opaque and flakes easily with a fork.
