Introduction

I just used regular yellow cake mix, substituted 1/3 c unsweetened applesauce for the oil, and 3/4 c of egg beaters for the eggs I just used regular yellow cake mix, substituted 1/3 c unsweetened applesauce for the oil, and 3/4 c of egg beaters for the eggs

Ingredients

    1 package Duncan Hines Moist Deluxe Classic Yellow Cake Mix
    1/3 c Treetop No Sugar Added Applesauce
    3/4 c Egg Beaters
    1 c Water

    Betty Crocker Whipped Milk Chocolate Frosting

Directions

Follow the directions on the cake mix package substituting the applesauce for the oil and the egg beaters for the eggs. I cooked each batch of 24 for 15 minutes on 325 degrees.

Once cooled, use 1/2 tsp of frosting for each one. It doesn't seem like much, but the mini cupcakes are small and it is an adequate portion.

Makes 80 mini cupcakes.
