Introduction
I made this a couple years ago for Thanksgiving and my family has been asking for it again ever since. So I made it for this year's Thanksgiving get-together, but I lightened it up some. I could have bought fat-free or lower-fat mayo too, but it was out of my price range this week! :(I know it sounds like a really weird combination of ingredients, but it comes out very good! I know it sounds like a really weird combination of ingredients, but it comes out very good!

Ingredients

2 cans chicken with stars soup, undiluted
2 8-oz packages fat-free cream cheese
1 cup mayonnaise
2/3 cup chopped onions
2/3 cup chopped bell peppers (red and green together is great for the holidays!)
2/3 cup chopped celery
2 3-oz packages lemon gelatin
1/2 cup boiling water
1 lb cooked shrimp, cut up
Directions
Heat soup until very hot but not boiling. Add cream cheese and stir until completely melted. Add mayonnaise and mix thoroughly. Set aside to cool.
Chop shrimp and vegetables
Add gelatin packets to boiling water and stir until dissolved. Mix all ingredients together, pour into a bowl or molds and chill until serving time.
It's a side salad, not a main course, so should easily serve 16 to 20.
