    *Betty Crocker Pie Crust Mix
    *Eggs, whole, 2 large
    *Granulated Sugar, .5 cup
    *Pumpkin Pie Spice, 1 tbsp
    *Pumpkin, canned, Libbys, 1 can
    Nestle Carnation lowfat 2% evaporated Milk 1 can (12oz)


1. Heat oven to 425F. Prepare crust according to package directions for a 1 crust, unbaked pie. put in pan.
2. In large bowl, beat eggs slightly with wire whisk or hand beater. Beat in 1/2 cup sugar, pumpkin pie spice, pumpkin and milk.
3. Carefully pour pumpkin filling into pie plate. Bake 15 minutes.
4. Reduce oven temperature to 350F. Bake about 45 minutes longer or until knife inserted in center comes out clean. Place pie on cooling rack. Cool completely, about 2 hours.

Makes 8 servings or 8 pieces of pie
