Introduction

My favorite thing to make from the last shreds of meat from the turkey carcass. It's also good with leftover roast chicken. This version is very mild, but you can spice it up with Tabasco Sauce, Jalepenos or other hot peppers.

The secret to the dish is a nicely flavored low sodium stock - preferably home-made and flavored with cumin. The sodium content is probably lower, since the nutritional info includes sodium from the canned beans and hominy that should be removed during the preparation.

Ingredients

    2 cups chopped onion - approximately 2 medium onions
    2 tbs olive oil
    2 tsp cumin seeds or ground cumin
    1 tsp oregano
    1 large stalk celery, chopped
    5-6 cloves garlic, minced or put through a garlic press
    2 cans green chilis, rinsed and chopped
    2 cans white hominy, rinsed well to remove excess salt
    2 cups cooked turkey meat in bite-sized pieces (great with the last shreds picked from the carcass)
    2 cups turkey or chicken stock (low sodium preferred)
    2 cans small white beans (or black eyed peas, or canelli beans), rinsed well to remove excess salt
    Salt, black pepper, Tabasco Sauce (or other hot peppers) to taste


Directions

Chop approximately 2 cups of cooked turkey or chicken meat.
Heat olive oil in a heavy bottomed soup pot.
Saute onion, cumin and oregano until the onion is translucent over med-high heat
Add celery and garlic. Saute 2-3 minutes.
Add chopped green chilis. Saute 2-3 minutes.
Add the hominy, turkey, stock and half the white beans.
Mash the remaining white beans, then add to the pot.
Simmer for about 45 minutes.
Adjust spiciness with Tabasco and/or jalapenos
Adjust seasoning
Simmer for about 15 minutes.
