Ingredients

    Barilla Plus Penne, 2 oz
    Chicken Breast, no skin, 1 breast, bone and skin removed
    Olive Oil, 2 1tsp
    Garlic, 1 clove
    Rosemary, dried, .5 tsp
    Cannellini Beans, 1 cup
    Sweet Roasted Peppers, 2 oz
    Spinach, fresh, 4 cup
    Parmesan Cheese, shredded, 2 tbsp

Directions

Cook the pasta acoording to the package directions. While the pasta is boiling, season the chicken on each side with a pinch of salt and pepper, and sear it over medium-high heat for 3-4 minutes per side. Remove from the skillet ansd set aside. Add the oil, rosemary, beans, red pepper, and spinach to the skillet. Cook, turning frequently, until the spinach wilts (1 to 2 minutes). Slice the chicken and drain the pasta; toss them with the mixture. Spoon the pasta into two bowls and top each with 1 tablespoon of parmesan. Makes two servings.

    Very Good
    We thought this was really good, though my husband said there were too many beans (I disagree). I just used cooking spray instead of olive oil for the chicken & seasoned it w/ Mrs Dash Italian. Its kind of "putzy" to make - it somehow seemed like I used a lot of dishes, but the taste was worth it. - 10/28/11
