Number of Servings: 6

Ingredients


    * Lentils, 1 cup (remove)
    * Onions, raw, 1 medium (2-1/2" dia) (remove)
    * Bay Leaf, 1 tsp, crumbled (remove)
    * Olive Oil, 2 tbsp (remove)
    * Olive Oil, 2 1tsp (remove)
    * Butter, unsalted, 2 tbsp (remove)
    * *Potato, Yukon Gold - 1 potato, 5.2 oz, 7 serving

Directions

bake potatoes on a bed of coarse salt ( 45-50 min @ 425)
mash chunky with butter and 2 tbs oil
cook lentils with bay leaves & 3 C water (25 min @ med-hi)
fry onions in 2 tsp oil
mix it all together
drizzle with olive oil, season with salt & pepper
