Number of Servings: 6

Ingredients

    4 cups of chicken broth
    1 tablespoon olive oil
    1 onion, diced
    1 teaspoon dried oregano
    juice of 1 lemon
    1 can of diced tomatoes with juice
    1 lb box of orzo
    1lb of chicken cubed into about 1 inch pieces
    8 cups fresh spinach, roughly chopped (I normally just use a big bag of spinach)
    1/2 cup crumbled feta cheese

Directions

Pour the olive oil in to a large skillet or small dutch oven over medium heat.

Add onion and saute until translucent.

Add the can of tomatoes, broth, lemon juice and oregano. Bring to a boil.

Add the orzo and reduce heat to simmer. Cover and cook for 6 minutes, stirring occasionally.

Add the chicken and cook for an additional 6 minutes or until the chicken and pasta are cooked.

Add the spinach and stir until just wilted.

Place in bowls and garnish with the feta cheese.

Serves 6.

    Made this last night and looooved it. I used some pre-cooked chicken from the store and threw it in when the orzo was almost done. The flavor combinations are delicious. - 1/6/10

    Loved this! I'll definitely be making it again. I cut the recipe in half and used 1 fresh roma tomato instead of the canned. It turned out great! - 11/11/13

    Very good I enjoyed this but I added cut up fresh cucumber diced after dish was done it added a nice fresh crunch . I wished the tomatoes were freshly cut too but dish was a nice base to work with - 7/9/11
