Ingredients

1 Can Black Beans 15 oz, rinsed.
1/2 block Extra Firm Tofu, rinsed and excess water pressed with paper towel
1 cup low fat Tomato Sauce or Marinara
1/2 cup water
1 medium Red or Green Bell Pepper, diced
2 small or 1 large Roma Tomato, diced
1 medium Onion, diced
1 clove Garlic, minced
2 tbsp. Chili Pepper, (more or less to taste)
2 tbsp. Maple Syrup or Brown Sugar
1 tbsp. Red Wine Vinegar
1 tbsp. Extra Virgin Olive oil
6 Whole Wheat Hamburger Buns or Pita Pockets
Directions
In a wide shallow pot, sautee onion and garlic in olive oil for 5 minutes on high medium high heat. Add tofu and crumble with wooden spoon. Mix in chili powder. Sautee 5 minutes more. Add bell pepper and black beans. Sautee 2 minutes more.
Add tomato sauce, chopped tomato and water. Simmer covered on low heat for 5 minutes. Add vinegar and maple syrup or brown sugar. Cover and simmer 5 minutes more.
Remove cover and simmer if too thick or add more water to thin depending on preference. Add extra chili powder or hot sauce if desire.
Serve hot in warm Whole Wheat Bun or inside warm Pita Pocket. Serves 6.
