Ingredients

    1/2 cup dry instant oatmeal
    3/4-1 cup water
    1/4 cup canned pumpkin (Libby's)
    4 pkts splenda
    1/4 tsp cinnamon
    1/8 tsp ginger
    1/4 tsp vanilla extract

Directions

Put dry oatmeal and water into a bowl (that has plenty of room for the oatmeal to expand with the water). Use more or less water depending on how thick you like your oatmeal (use less if you want it thicker, use more if you like it thinner). Microwave on high for 2 minutes. Stir in splenda, pumpkin, cinnamon, ginger, and vanilla and enjoy!

    This was great! I added the additional ingredients after cooking for 1 minute, then cooked one minute more. I skipped the Splenda (I don't use it) and added 1 tbl. brown sugar. Don't skip the vanilla, it makes a difference! Thanks! (P.S. For the spices I used Pumpkin pie spice instead.) - 1/19/08

    Plenty of taste and fiber. This one's a keeper. i used stevia. A couple of chopped, toasted walnuts or pecans would be good on top. - 7/2/09

    The recipe says to use instant oatmeal but the nutritional breakdown says it uses Old Fashioned Quaker Oatmeal- Plain (1/2 cup dry), (1 serving). So which is correct? There is a big difference in the two kinds. - 3/15/13

    Amazing! I added some brown sugar instead of splenda and used 1/2 cup of pumpkin and an extra dash of vanilla. Delicious and very filling!! - 2/1/12

    Having this for breakfast tomorrow morning, can't wait to see if I like it. I love to add things to my oatmeal, like fruits, but never even considered pumpkin, but why not, I love Pumpkin oatmeal cookies. - 6/11/11
