Introduction

This is a morning favorite with a great blend of flavors This is a morning favorite with a great blend of flavors
Number of Servings: 1

Ingredients

    2 Large Eggs
    1/2 c. diced ham
    1 c. fresh spinach leaves
    1/4 c. chopped onion
    1/2 c. sliced mushrooms
    3/4 c. swiss cheese

    1/4 c. Fresh salsa (optional)

Directions

Mix all ingredients together in a bowl omitting the cheese. Put in omelette pan, cover & cook until bottom is brown and middle is almost set (not runny). Add cheese and fold over. Serve with salsa & a bowl of chilled fruit. Yummy!

Makes 1 omelette.
