Introduction

I had lamb the day I made this. If I use dry beans I quick soak them then put everything in the pressure cooker for 20min. This is the slower version. I have a slow cooker but don't use it much.

Ingredients

    Onions, raw, 1 medium (2-1/2" dia) diced or slivered to taste
    Lamb Shank, 2 lb cubed, leave some meat on the bones for those who like it.
    Garlic, 3 cloves mashed with a dash of salt
    Tomato Paste, .125 cup
    Coriander seed ground, 1 tsp
    Cumin seed ground, .5 tsp
    Salt, 1 tsp
    Pepper, black, .5 tsp
    Pepper, red or cayenne, .25 tsp to taste

    whole can each
    -Bush's Dark Red Kidney Beans
    -Bush's Red Beans
    -Bush's Black Beans
    -Bush's Best Navy Beans

Directions

simmer onions in a small amount of water (lamb has enough fat for this recipe) until onions are soft. Add lamb, when lamb is brown add garlic & stir. Mix in tomato paste, spices simmer 2min. Then add enough water to keep the mix from burning while you add the beans. Simmer adding water as needed until lamb is done 45min to 60min.
