A quick and easy recipe that is kind of like salsa dip on a sandwich. The spiciness of the salsa is toned down by the creamy cheese. The tofu adds some protein for a well-rounded meal. Ingredients

    Arnold Select Sandwich Thins
    Neufchatel Cheese (can use cream cheese)
    Salsa
    Mozzarella Cheese
    Extra firm tofu
    Chile Powder

Directions

Toss tofu in chile powder and saute until brown around edges. In a small oven-safe bowl, layer neufchatel cheese, salsa, cooked tofu, salsa, and mozzarella cheese. Place bowl in preheated oven at 400 degrees until cheese is brown ( you can also microwave it to save time). In meantime, toast the sandwich thins. Layer half of the salsa mixture on each side of sandwich thin for open-faced sandwich. Serves one.
