Ingredients

    Cauliflower, raw, 1 head, large (6-7" dia) (remove)
    Onions, raw, 1 large (remove)
    Garlic, 6 cloves (remove)
    Olive Oil, 5 tbsp (remove)
    *Campbell's low sodium chicken broth, 4 cup (remove)
    Nutmeg, ground, .5 tsp (remove)
    Thyme, ground, 1 tsp (remove)
    Mrs. Dash (R) Original Blend, 2 tsp (remove)
    Pepper, black, 1 tbsp (remove)
    Salt, 1 tsp (remove)
    Apples, fresh, 2 medium (2-3/4" dia) (approx 3 per l

Directions

Preheat oven to 400 degrees
Break up cauliflower into small pieces
Toss lightly with 3 tsp of olive oil and sprinkle with Mrs. Dash
Roast for approximately 25 minutes
Chop onion and garlic and saute in 2 tsp olive oil to soften add shredded apple for the last couple minutes
Add 4 cups chicken stock and 4 cups water
Add Cauliflower and bring to boil, then simmer for 2 hours, or put in crock pot on low for up to 5 hours
Makes approximately 14-16 cups
