Ingredients

* Bacon, 31 grams (approx 6 slices cooked)
* Egg, fresh, 4 large (scrambled)
* Cheddar Cheese, 2.1 oz (shredded)
* Shaw's Non-Dairy Coffee Creamer, 5.3 tbsp (1/3 cup)
* Red Ripe Tomatoes, 2 wedge (1/2 of medium tomato sliced)
Directions
Cook the bacon using whichever method you prefer. I usually cook it in the oven - make it crisp - nothing worse than chewing on soggy bacon fat in an omelet!
While the bacon is cooking, scramble your eggs, and add the shredded cheese, sliced tomato & non-dairy creamer. When the bacon is nice & crispy, crumble it in some paper towel and add that to the egg mixture.
Pour into a nonstick frying pan and cook as you would any other omelet - or scramble it up. Doesn't matter, it's still delish!
This makes 2 GOOD sized omelet portions, but could go to 3 as well.
