Ingredients

6 slices bread
butter
1 1/2 cup cheese, shredded (low fat)
4 eggs
1 1/3 cup milk (non-fat)
1/2 tsp salt
1/4 tsp pepper
2 tsp prepared mustard
1/3 cup slices green onion
1- 1 1/3 cup diced ham
Paprika
Directions
Butter bead; remove crust and cube. Put bread cubes into 8x8x2 pan. Beat eggs, stir in milk, onion, mustard, 1/2 tsp salt, 1/4 tsp pepper. Pour egg mixture over bread cubes. Layer diced ham and then cheese on top. Sprinkle with paprika.
Cover; chill in refrigerator for 2 to 24 hours.Bake, uncovered in 325 degree oven for 45-50 minutes or until set and lightly browned. Let stand 10 minutes. Serves 6.
This recipe lends itself to many variations. I have substituted canned chiles for the scallions, chipotle powder for the paprika, and except for the bread, I used low or non fat ingredients wherever possible.
I use French bread because it has better texture than plain white bread. Also, I double the recipe and bake it in 9x13 pan.
