Introduction

Ingredients

2 1/2c flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 c butter
1/4 fat free vanilla yogurt
1/2 c Fat Free Milk (add to moisten batter if needed)
1/4 c sugar
2 1/2 tsp lemon zest
1/4 tsp nutmeg
1/2c honey
1 egg
1c grated raw sweet potato
Directions
1. pre heat oven 350F
2. Sift together flour, baking soda, baking powder, &salt.
3. in a seprate bowl cream butter, yogurt, and sugar untill smooth.
stir in lemon, honey, nutmeg, and vanilla untill blended.
mix in potato.
stir in flour mixture until blended.
NOTE: if batter has a dough like consistancy it is too thick and needs milk to help thin it out.
4. Place spoon fulls of batter about 2 inches on a greased baking pan and bake for about 7 minutes.
sould make about 30 cookies.

These are yummy! I used carrots instead of sweet potatoes; subbed whole wheat for part of the flour; subbed molasses for part of the honey; & added cinnamon & some walnuts. Took 10 mins. to bake--7 was too short. (Also, you should include the egg in mixing instructions.) I'll make these again! - 1/16/11
