Number of Servings: 3

Ingredients

    2 medium potatoes
    1 small butternut squash (approx 400g)
    2 tsp margarine
    1 small red onion, chopped finely
    1 tbsp finely chopped shallots
    2 cloves garlic, minced
    1 tbsp chopped chives
    30ml / 1 fl oz non-fat milk

Directions

1. Peel the potato and cut into rough cubes. Remove the skin and seeds from the butternut squash and cut into cubes. Add to the potato and cook in boiling water until soft.
2. Melt the margarine and briefly fry the red onion, shallots and garlic.
3. Mash the potato and squash mix and add the milk to soften.
4. Stir in the onion mixture and half the chopped chives.
5. Serve with the remaining chives sprinkled on top.
