Ingredients

    1 pound turkey breakfast sausage (Jennie-O)
    1 cup Pioneer Low Fat Biscuit & Baking Mix
    2 cups egg substitute, liquid (Egg Beaters)
    1 cup skim milk
    1 red pepper, raw, chopped
    1/2 green pepper, raw chopped
    1/2 cup mushrooms, rough chopped
    8 one ounce slices of pepperjack cheese
    1 tsp black pepper (optional)
    Salt to taste

Directions

Cook turkey sausage in a skillet. While sausage is cooking chop peppers. Add peppers and mushrooms to sausage and sauté while you are assembling the egg mixture. Drain sausage and veggies. Measure biscuit mix into a large mixing bowl. Slowly add milk and stir with fork. Add egg substitute and mix until biscuit mix is dissolved. Add sausage and peppers to an 11 x 7 pan. Pour egg mixture over sausage and peppers. Add cheese to top of mixture. Cook on 325 degrees for 60 minutes while you’re opening Christmas presents. I made the night before and refrigerated until Christmas morning. Makes 15 or 12 servings depending on how large you cut the pieces.
